Incredibly, Awesomely Good for You
This awesome, tasty, flour free pizza is low carb, gluten-free, high(er) fiber, high in vitamin C, vitamin A and Calcium.
I like it better than traditional flour-based crust. I’ll never go back to bread crust.
Crust
- 1 large head of cauliflower
- 3 eggs
- 1/2 cup of grated Parmesan cheese
- 3/4 cup of grated sharp cheddar cheese (or substitute whatever cheese you like)
- 1 tablespoon of oregano
- 2 tablespoons of olive oil (save 1 tablespoon for oiling the pan and the crust)
- 1/2 teaspoon of salt (or chicken bullion)
Preheat oven to 400 degrees F. Quarter and steam the cauliflower just until tender (about 10 minutes). Remove from steamer, place between a couple of towels and smash as much of the moisture out as you can. Place cauliflower and all remaining ingredients in a food processor, pulse a few seconds until coarse but mixed. Oil a 13 x 18 baking pan (with sides, no cookie sheets, or the oil will ooze out and make big, black, stinky smoke clouds in the kitchen) with 1/2 T olive oil, mash the mixture into the pan, oil the top of the “crust” with an additional 1/2 T olive oil. Bake until crispy on the edges (about 20 minutes).
Sauce
- 12 oz of (2 cans) tomato paste
- 12 oz of (1 can) diced tomatoes
- 2 tablespoons of italian spice blend (spices of your choice; I recommend oregano)
- 1 tablespoon of black pepper
- 1/2 teaspoon of salt (or according to taste)
- 1 cup of diced, roasted chicken
- 2 tablespoons of diced, pickled garlic
Mix all that together and spread on baked “crust.”
Toppings
(Calories per slice are in parenthesis next to the topping in case you want to omit that)
- 30 pepperoni slices (26 calories)
- 4 slices of bacon, cooked, crumbled (22 calories)
- Jalapeno slices (if you’re counting calories this closely, maybe you should loosen up just a little)
- 4 oz (1 can) of black olives (3 calories)
- Fresh mushrooms (seriously, lighten up)
- 1 onion, chopped and browned
- 1 cup of extra sharp cheddar cheese, shredded (45 calories)
- 1 cup of Pepper Jack cheese, shredded (33 calories)
Throw all that stuff on there, bake until browned and bubbly (about 15 minutes).
Nommy. Really. Even better the next day.
